Pineapple Mint Verde Matcha Float (with Pineapple Cold Foam)

Matcha on the rocks, Pineapple Mint Verde over ice, finished with a pineapple cold foam that tastes like a five-star pool day in one glass.

Build (per serving)

• 3 oz chilled Pineapple Mint Verde iced tea

• 2 tsp high-quality matcha

• 2–3 oz cold water

• 3–4 oz cold milk of choice (oat, almond, or dairy), or a 50/50 milk + water blend

• Ice

Method

1. In a shaker or bowl, whisk matcha with cold water until smooth.

2. Fill a tall glass halfway with ice.

3. Pour in the chilled Pineapple Mint Verde.

4. Gently layer the iced matcha over the tea (you’ll get a two-tone effect if you pour slowly).

Pineapple cold foam

• 3 tbsp cold heavy cream or barista oat/cream blend

• 2–3 tbsp pineapple juice

• 0.5–1 tbsp vanilla or simple syrup, to taste

Shake or froth until silky and thick enough to float on top.

Assembly

1. With Pineapple Mint Verde and matcha already in the glass over ice, leave about 1–1.5 inches at the top.

2. Spoon or slowly pour the pineapple cold foam over the drink, letting it sit as a distinct layer.

3. Optional: garnish with a tiny pineapple wedge or mint leaf on the foam.**Positioning line (optional for menu)**



Signature cocktail: Pineapple Mint Verde Guest-Choice Highball

Pineapple Mint Verde, poured tall over ice—finished with your choice of gin, tequila, or vodka.


**Base build (per serving)**

- 4 oz chilled Pineapple Mint Verde iced tea - large batch pouches

- 1.5 oz guest’s choice: gin, tequila blanco, or vodka

- 0.5 oz fresh lime juice

- 0.5 oz pineapple juice (optional, for extra fruit)

- Ice

- Garnish: pineapple wedge + mint sprig


**Method**

1. Fill a tall rocks or highball glass with ice.

2. Add the spirit of choice, lime juice, and pineapple juice if using.

3. Top with Pineapple Mint Verde and give one gentle stir.

4. Garnish with a pineapple wedge and fresh mint sprig.


**Service note**

- You can batch everything except the spirit, then let the guest choose their lane: “Pineapple Mint Verde with gin, tequila, or vodka.”

All the Pineapple Mint Verde moment—none of the alcohol.


**Per serving**

- 4 oz chilled Pineapple Mint Verde iced tea

- 2 oz pineapple juice

- 1 oz fresh lime juice

- 2 oz chilled sparkling water or club soda

- Ice

- Garnish: pineapple wedge + mint sprig


**Method**

1. Fill a tall glass with ice.

2. Add Pineapple Mint Verde, pineapple juice, and lime juice; stir gently.

3. Top with sparkling water or club soda.

4. Garnish with pineapple and mint.
